As it seems this particular raid will be starting with ToC10 to get it's feet wet and comfortable, it means you can easily just do one night a week to start. The weekly can be fit in with ToC in one night. When you start ICC once you feel comfy with the group, that too can be done only in one night. When you start pushing the harder content in which you are working on progression and completion of Icecrown like the current group is doing, then you may very well need two nights. But that can be discussed and planned for once you get to that point. We did have a few weeks before they opened up that second wing where, really, we had no idea what to do for our second night and sorta just went whereever.
Going just one night to start, I'm thinking you might want to think about Wednesdays, since that seems to be the say people are most comfy with atm. Maybe.
